Egg & Mushroom Tortilla Wraps With Eggoz

Wraps and tortilla folds and wraps have long been a global favorite—easy to make, versatile, and perfect for any time of the day. This particular version brings together the richness of mushrooms, the creaminess of cheese, and the unbeatable goodness of farm-fresh eggs, making it a wholesome and filling meal.

I discovered this recipe during a rushed morning when I had limited ingredients but a huge craving for something comforting and protein-packed. With Eggoz eggs in my fridge and tortillas on the counter, the idea clicked. One bite into this cheesy, umami-rich fold, and it instantly became a regular in my breakfast (and dinner) rotation.

Ingredients:

  • 4 Eggoz Eggs
  • Salt (to taste)
  • 1 tbsp Butter
  • Handful of Mushrooms, sliced
  • 1 Tortilla
  • 2 tbsp grated Cheese
  • 2-3 Lettuce leaves
  • 1 tsp Chillie Oil
  • 4–5 Cherry Tomatoes, halved


Preparation:

  1. Crack 4 Eggoz eggs into a bowl.
  2. Sprinkle salt to taste and whisk the eggs until fluffy.
  3. Heat butter in a non-stick pan.
  4. Add sliced mushrooms and sauté until golden brown. Set them aside.
  5. In the same pan, pour the whisked eggs and let them spread into an omelette shape.
  6. Immediately place a tortilla over the eggs before they set fully.
  7. Once the eggs are cooked from the bottom, flip the entire tortilla-omelette combo carefully.
  8. Make a single cut from the center of the circle outwards.
  9. Divide the circle into four quarters, and place cheese, lettuce, chilli oil, cherry tomatoes, and sautéed mushrooms on each section.
  10. Now, fold each quarter over the next to form a layered triangle.
  11. Cook each side for a minute until golden and slightly crisp.


Serving

Serve hot with a side of spicy ketchup, sour cream, or just as is. It’s perfect for breakfast, lunchbox meals, or even a late-night snack.


Tips

  • Make sure to use a large enough pan to easily flip the tortilla and eggs.
  • For an extra kick, sprinkle some crushed black pepper or chili flakes before folding.
  • You can also try it with caramelized onions or spinach for variation.
  • If using whole wheat tortillas, slightly warm them beforehand to prevent tearing.
