Sometimes, the best recipes come from leftover food and quick thinking. That’s how I made Egg Rotizza — a mix of roti and pizza topped with eggs. I was looking for a quick, healthy meal for my 8-year-old, who is a picky eater. I had some leftover chapatis and Eggoz Eggs at home and decided to give this a try.
It turned out to be one of the easiest and tastiest dishes I’ve made. You can also try this with tortillas if roti isn't available.
Ingredients:

2 Eggoz Eggs

3 Roti or Tortilla

Salt and pepper to taste

2 tbsp milk

Sliced tomatoes and mushrooms

Chopped green chillies
- Grated cheese (as per taste)
Preparation:

Place a roti or tortilla in a non-stick pan.

Crack two Eggoz Eggs directly on top.

Add salt and pepper.

Gently whisk and spread the eggs using a fork.

Add 2 tablespoons of milk to the eggs.

Place tomato slices, mushrooms, and chopped green chillies on top.

Sprinkle grated cheese.

Add 1–2 tablespoons of water beside the tortilla for steam.

Cover the pan and let it cook on low heat until the eggs are set and cheese melts.
Serving:
Serve hot. You can slice it like a pizza or roll it like a wrap. It works well for breakfast or a quick evening snack.
Tips:

Add veggies like corn or paneer for more variety.

You can bake it in the oven with 2–3 rotis or tortillas stacked for a thicker base.

Avoid overcooking the eggs to keep them soft.

Sprinkle chilli flakes or oregano if you like a bit of extra flavor.
