Kolhapuri Green Masala Egg Curry

If you want to enjoy true Indian flavors but are bored with usual onion tomato gravy then try this Kolhapuri Masala green curry. Boiled egg, marinated in Indian spices and added in delicious spinach gravy, this recipe is a host of all nutrients.

  • 3 Eggoz Eggs
  • 1 cup Spinach paste
  • 1 cup onion (chopped)
  • ½ cup tomato puree
  • 1 tbsp cumin seeds
  • 2 tbsp ghee
  • 1 tsp green chilli (sliced)
  • 1 tsp red chilli powder
  • 1 tsp turmeric powder
  • 1 tsp coriander powder
  • Salt (as per taste)
  • Coriander (for garnish)


  • Boil 3 eggs for 15 minutes. Cut them in half, add spices and shallow fry them in ghee until slight golden
  • In another pan, add ghee, cumin seeds, green chilli , onion and saute them till they become golden brown
  • Add tomato puree, red chilli powder, turmeric powder, coriander, salt and mix well
  • Cook for 5-10 minutes to let the flavors enhance 
  • Add spinach paste and let it cook for another 10 mins
  • Add the boiled eggs
  • Mix curry with egg and garnish with coriander
  • Serve hot with roti, Naan or any other choice of bread and enjoy!
