Hash Brown With Eggs A Perfect Breakfast

Hash brown is an American continental breakfast recipe that combines potatoes dipped in beaten eggs and seasonings as per choice. They are usually deep fried but we have made them in a different way which gives an ambrosial mouth feel. Also, it requires just a handful of basic ingredients which are mostly available in all Indian households and takes not more than 20 minutes in total! You can even store the batter and use the next day if you are always on the go. Thus, this time saver recipe is a definite must try for all who loves potatoes but want to add an extra nutrition punch in their meals.

INGREDIENTS:

  • 1 Potato
  • 1 tbsp Red chilli flakes
  • 1 tbsp Black pepper
  • Salt as per taste
  • 4 tbsp Flour
  • 2 Eggoz eggs
  • Butter/ghee
  • 4 tbsp butter/ghee
  • Chopped coriander

PROCEDURE:

  • To begin with, take the potatoes and shred them (peeled or unpeeled) with the help of a cheese grater and clean with cold water.
  • Squeeze out as much water as possible by wrapping the shredded potatoes in a kitchen towel. This will help to drain out all the starch water. After draining, transfer the potatoes in a clean dish.
  • Add an egg, all-purpose flour, black pepper, chilli flakes, finely chopped coriander and salt as per taste in the same dish. Mix everything properly.
  • Also, take 1 egg and separate their egg yolks in a small bowl.
  • Take a medium sized saucepan and heat it over a flame. Add ghee/butter to the pan over medium-heat. Add the potato mix in a 1/2 inch thick layer to the pan and try making small pits in the center. 
  • Now add the separated out egg yolk in those pit and let them cook. You can cover the entire bottom of the pan or make separate stacks, just the way you like.
  • Cook both the sides until they become golden in appearance.
  • Remove them from the pan, serve with your favorite sauce or cheese dip.
