Ingredients

  1. 2 large bell peppers (any color) 
  2. 4 large eggs
  3. 1/4 cup shredded cheese (cheddar or mozzarella) 
  4. 1/4 cup diced tomatoes 
  5. 1 tablespoon chopped onion 
  6. 1/2 teaspoon Italian seasoning 
  7. Salt and pepper to taste
  8. 1 tablespoon olive oil 
  9. Chopped parsley or cilantro for garnish 

Instructions

1. Preheat the Oven: Heat the oven to 375°F (190°C). Prevent sticking by parchmenting or gently greasing a baking sheet.

2. Prepare Bell Peppers: Cut the bell peppers in half lengthwise and remove the seeds and membranes. Brush the insides with olive oil and set cut-side up on the baking sheet.

3. Partially Roast Peppers: Pre-heat the oven and roast the peppers for 10 minutes to soften. This makes the eggs soft and perfectly done when baked.

4. Prepare Filling: Mix the diced tomatoes, chopped onion, and Italian seasoning in a small bowl while the peppers bake. Add a little salt and pepper.
